I’d not been successful at making fudge before. At least the kind that I’m used to. Not the Americanized ‘fudge’. But I found this video on Youtube and thought I’d take another stab at it. This chef has another video on how to make clotted cream, and that’s the step I need to get better at. Anyway, they turned out amazingly!
They are so rich and bursting with flavour, you’ll want to savour these for a long time.
I set up the clotted cream overnight, then whipped up the fudge pretty quick in the morning. It didn’t take long at all. You will need a sugar thermometer though if you want to be accurate.
